Welcome back to Bangkokhooker’s Kitchen of Manliness and I hope you are all safe from the flood. In the last chapter of the Kitchen of Manliness, I introduced you all to the Deep-fried Man-Dog, a meat monstrosity that combines the legendary powers of bacon, cheese, minced meat and deep-fried awesomeness. It was a spur of the moment creation done within a limited time frame in a kitchen I wasn’t entirely familiar with.

Yesterday, I decided to go all out and create an improved version of the Deep-Fried Man-Dog with some gravy to accompany it.

Ingredients (Makes one Man-Dog)

Shit you’ll need for cooking

  • One large deep pot or a deep-fryer
  • Some spatulas
  • Mixing bowl
  • Baking paper
  • Lots of toothpicks
  • A Brush
  • A Lighter

For the Man-Dog

  • 1 Oktoberfest sausage, whole
  • Half an onion, diced
  • 150g of minced beef
  • 2 slices of cheese
  • 1/2 tablespoon of cornstarch or potato starch
  • 5-7 strips of bacon
  • 2 eggs
  • 1//2 cup of bread flour
  • 1/2 cup of bread crumbs
  • A lot of oil cooking oil
  • herbs and spices for seasoning (cayenne pepper, paprika, thyme, rosemary)

For the Sausage Bourbon Gravy

  • 1 packet of beef stock
  • 1 tablespoon of butter
  • 1 tablespoon of cake flour
  • 1 cup of water
  • 1/2 cup of beer
  • 2 tablespoons of ketchup
  • 1 sausage, diced
  • 3 shots of bourbon
  • half an onion, chopped

Recipe for the Man-Dog:

Step 1 In the mixing bowl, combine the beef with the egg, onions, herbs, spices and the starch.

Step 2 Mix until smooth.

Step 3 On a piece of baking paper, place bacon in a row making sure that they overlap each other to prevent leaking. See the image.

Step 4 Place the meat mix onto the bacon. Make sure that the meat is evenly distributed at about 1-2cm thickness.

Step 5 Place two slices of cheese onto the meat/bacon combo.

Step 6 Place the sausage on the cheese (not pictured). Then using the baking sheet, roll everything up like in the picture. Man-Dog making step 6 Wrap it all up!


Step 7 Secure the meat package with tooth picks to prevent leaking.

Step 8 With everything nice and secured, coat it all in cake flour

Step 9 Give that raw Man-Dog a rub of egg wash.

Step 10 Coat it all in breadcrumbs

Step 11 Heat up the oil to about 160-165 Celcius and DEEP FRY. Make sure you gently place the Man-Dog into oil as to prevent it from breaking. Rotate your Man-Dog every 3-4 minutes.

Step 12 After about 20 minutes, remove your golden deep-fried Man-Dog. Shake off excess fat to be healthy.

Step 13 Heat up at sauce pan to medium-high and melt some butter.

Step 14 Add a tablespoon of cake flour, chopped onions, diced sausage and stir for a minute or until onions and sausage pieces are browned.

Step 15 Add the beer, beef stock, water ketchup and stir. When it simmers it is finally time to add the bourbon. Don’t forget to light it up!

Step 16 Simmer that SAUUUCE for 2-3 minutes!

Step 17 It’s time to give the Man-Dog it’s long-awaited gravy bukake! Pour the sauciness onto the meat monster!

        Gonna haveta try it sometime soon….with a Malaysian twist perhaps?

        Btw, thanks for the flood updates. Keep em’ coming Oz, crossing my fingers and hoping that the situation improves so we can hit BKK and fish like mad!

    OMG dude! You really have made improvements on the man-dog! I have yet to make mine, I’m thinking of doing like a cajun version when I do..like with an andoullie sausage or something. I’ll send pics when I do!
